Great information. What a fabulous adventure you had living in Japan and experiencing the food culture so closely. The recipe looks fabulous - I love the simplicity and ingredients!

I'll write about it in early February, including my memories from Japan where they have so many ways to prepare it, mostly unknown in the US. I bet you'll have some fantastic tofu recipes! Can't wait!
